Moving to Fort Worth from Louisiana with the oilfield in 2009 I quickly learned what it's like to miss out on all the great foods I grew up on. Not only are these foods and ingredients less accessible here but GOOD QUALITY Cajun/Creole Cuisine can be VERY difficult, if not impossible, to find! 

There are a few places around here that consider themselves “Cajun Restaurants” but most know very little about authentic Louisiana foods and ingredients. 

A lot of the so-called ”Cajun“ fast food joints around here are quick to advertise “WE HAVE CRAWISH” or “CRAWFISH ARE HERE” but have no clue how to prepare them the way they should be. 

A lot of restaurants simply boil their Crawfish, then sprinkle them with some random store bought seasoning, then serve them to you all for some outrageous price.

If you’ve ever wondered why most Texas restaurant Crawfish are so bland, and have very little flavor, now you know why!

Also most restaurants use only field run Crawfish, basically the “runts” of Crawfish, very cheap and typically very small. 

We don’t like to use field run crawfish in our restaurant or caterings, we only use select/graded Crawfish once they become available. Yes it costs us more but that means you get bigger and better quality Crawfish that will keep you coming back for more!

Here at Acadia Parish Crawfish we know Crawfish because well... that’s what we do! 

I’ve been boiling Crawfish for over 25 years, every season, using dozens of different blends of seasoning, different techniques and different farms until I finally found the best methods, best seasoning and best quality product money could buy!

We are a professional, full service, catering company serving all of Dallas/Fort Worth and surrounding areas. 

Weddings, baby showers, business lunches, dinners, cocktail receptions, birthday parties, family reunions, graduation parties, we can do it all!

Our 20ft monorail Catering Trailer has the ability to fry, grill, smoke or boil any and all of your favorite foods! 

No matter how big or how small, we got you covered!

With over 1,500 lbs boiled Crawfish capacity we can serve hundreds of people on arrival. 

Corporate event or just set up in your backyard for a neighborhood boil with family and friends, relax, have a drink, and let us do the work!

Set up, serve, clean up, table ware, paper towels, condiments, extra seasonings, etc. we do it all so you can enjoy time with your family and friends!

We can even book a live, professional Cajun/Zydeco band for your event! Just let us know if you’re interested when you call and we will go over details and availability with you.

Live Crawfish Sales

Live Crawfish sales are held every Saturday from 9am-12noon during regular season.

Pick up location: 5300 East Lancaster Ave.

All orders must be reserved by credit card no later than Thursday at 10am each week during the regular season. 

Regular season “typically“ begins January/February and “typically“ ends in July/August. 

All sacks are 30 lbs, prices change throughout the season so call for pricing.


A true cleaned crawfish is one that has been washed with fresh super oxygenated water for at least 14 hours. This process was developed originally as a way to hold inventory. It was soon discovered that the crawfish purged itself from fasting in fresh clear water. This process is expensive and labor intensive and is only practiced by a few of the very best producers.

Our crawfish remain in this hyper-environment until they are shipped… literally up to the last minute. The crawfish coming out of the tanks are super healthy with all the weak and or dead crawfish removed by hand. This means we only provide the very best, super clean, super lively product available. This process improves the shelf life dramatically, therefore our crawfish live longer.

After this process is completed your crawfish are shipped directly to us from our farm in Acadia Parish Louisiana assuring you only the freshest, liveliest crawfish on arrival every time!

We also ship live Crawfish all over the U.S. with the exception of: Alaska, Hawaii and Washington. 

Need seasoning? Give our dry seasoning a try! We offer our own proprietary blend of dry Crawfish seasoning in a 3lb bag for $10 (good for one 30 lb sack of crawfish) 

Got a big boil? Our 50# case bulk seasoning will save you time and money! @ $85 a case you save 50%! 

We even sell the shakers of our seasoning for $6 each!

We also carry Louisiana Crawfish/Crab liquid concentrate for $7 per 16 oz bottle or $25 for a full gallon.

We offer our 21/25 count, headless, shell-on, jumbo shrimp in 4 lb frozen blocks for $40 each.

Corn and new potatoes $2 per person

2.5 lb packages of smoked sausage $10
